Our first Premium Rum wholly fermented, double distilled and aged on the Redcliffe Peninsula.
In 2023 we experimented with five (5) different Rum Yeasts with the target to find a combination of two yeasts that would create our own Rum profile.
Distillation was a combination of Pot and Column distilled and in December 2023 we put down fifteen (15) 25L barrels re-coopered by Damian Howarth from ex South Australian Sherry Barrels.
Barrels 1-10 were combinations of two yeasts
Barrels 11-15 held the individual yeasts.
This release is the blend of the barrels 11-15 and we have named it “The 5” to reflect the five different barrels and the five individual yeasts.
Released June 2026 with only 112 bottled available to the public.
